Happy Holidays
Well, can you believe Christmas is just around the corner. It seems like it was just Thanksgiving. I hope everyone has gotten their christmas shopping done. I havent done to much blogging this month. I will have stuff up in January for sure. Try not to eat to many cookies and cakes this hoilday season. I know its hard not too. I hope everyone has a wonderful Christmas and a Happy New Year.

Fitness
You want to burn 200 calories in 15 minutes. Well, all you need is a jump rope. Jumping rope is better on you knees than running. It takes concentration, coordination, and balance. It also tones your hips, thighs, and butt. This is a very inexpensive way to get some exercise in. You can get a good jump rope anywhere. Let me know how it goes. Good luck and have fun jumping. :)

Balsamic-Glazed Green Beans
1 (12 -ounce) package trimmed green beans
1 tablespoon butter
3 tablespoons minced shallots (about 2)
2 garlic cloves, minced
1/4 cup balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Microwave green beans according to package.
While beans cook, melt butter in a large skillet heat. Add shallots and garlic; cook, stirring
constantly, 2 minutes. Stir in vinegar, salt, and pepper; cook 1 minute. Add beans, tossing to coat.

Chicken Vegetable Barley Soup
5 cups fat-free, less-sodium chicken broth
2 cups shredded rotisserie chicken breast
1/2 teaspoon kosher salt
1/2 teaspoon feshly ground black pepper
1 (16-ounce) package frozen veggie soup mix w/tomatoes
3/4 cup quick cooking barley
2 cups chopped bagged baby spinach leaves
Combine first 5 ingredients in a large Dutch oven. Cover and bring to a boil. Stir in barley; cover, reduce heat, and simmer 10 mins, stirring occasionally. Remove from heat; stir in spinach, and let stand 5 mins.
(serving size: about 1 cup).
